A flatbed printer holds a rigid, cut-to-size piece — a board, a panel, a tile — flat while the printhead travels across it. A roll-to-roll printer feeds a continuous flexible material off a roll, prints it in motion, and rewinds it onto another roll. Rigid materials can only run on a flatbed; flexible, rollable materials are usually more efficient on roll-to-roll. Most substrate decisions on this site already tell you which one applies before the machine question even comes up.
A flatbed press processes one sheet or one jig-mounted part at a time — the material sits still, usually held by vacuum, and the printhead gantry moves over it. That's the only option for anything that can't bend: acrylic, composite panel, glass, tile, wood, metal, and most of the rigid surfaces covered elsewhere on this site. Bed size and Z-height clearance cap what fits, but within that limit, thickness and rigidity aren't a problem.
A roll-to-roll press does the opposite — the printhead stays largely fixed while the material itself moves, unwinding from a supply roll, passing under the print zone, and winding back up on a take-up roll. That only works for something flexible enough to wrap around a roller without cracking: canvas, vinyl banner material, some thin films and fabrics. Run length stops being a constraint the way bed size is on a flatbed — a roll-to-roll job can print tens or hundreds of feet in one continuous pass.

Most of the substrate pages on this site already answer the flatbed-or-roll question implicitly — a composite panel or a piece of acrylic is always flatbed, and canvas is usually roll-to-roll for anything beyond a handful of pieces. The question mostly comes up when a job description is ambiguous — "printed panel" could mean a rigid board or a rollable film, and those two versions of the same material family run on different machines with different lead times.
This is also part of why a mixed order — say, a trade show booth with a rigid backdrop and a roll-printed banner — takes two separate setups rather than one job scaled up. Each substrate needs its own machine, its own jig or feed setup, and its own turnaround, which is the same coordination issue covered in more depth on the file prep requirements page.
